Last week I popped in to see Alannah Derley, the brains behind the gorgeous cake creations at Exquisite Cakes in Castle Hill.
How long have you been in business?
We have been in business for 35 years and 3 years in our current location.
What makes your business different?
We are a family owned and operated business that have a true passion for edible art pieces. Stepping into our store takes you to a dream land of cakes, cookies, gingerbread houses, cheesecakes, macarons and much more! There truly is something for everyone and nothing is ever to hard for us. Everything is made on premises and we are lucky enough to have an expert pastry chef on our team.
What trends do you think are going to be big in 2015?
Trends that will be big next year are watercoloured cakes, big tall cakes with beautiful contrasting textures, wafer paper flowers in beautiful prints and colours and edible sequins on cakes. We are seeing these currently infiltrate the market overseas, however they are yet to hit their peak in Australia.
What is your favourite style of cake?
There are so many cakes that we have loved creating and it is so exciting to see your ideas and designs come to life that is so hard to pin point a favourite.
What do you love about your business?
I love the creative side of the business and meeting with clients that are as passionate and excited as you when discussing their designs. It always puts a smile on your face and make everything worthwhile when they send through a beautiful testimonial stating how much they loved the cake.
What do you find challenging?
Trying to switch off out of hours when there are so many beautiful cakes to look at. We live and breathe our business!
